5 Family Meals under £20

With the summer holidays coming to a close, take the stress out of back to school with these five family friendly meal ideas for under £20!

Quick and easy meal ideas to feed your family this september on a budget.

I'm here to help you feed the family for less with a little planning!

With families feeling the pinch more than ever, i'm here to show you how with a bit of careful planning and good ingredients you can make 5 family meals from £20 worth of food. I got all this from Aldi and created five hearty family friendly meals and you can too!


1. Roasted Tomato and Cheese pasta


What you'll need:


This is a super easy to make meal that you can prepare in less than 5 minutes, here's what you'll need:

  • 1 pack of tomato's

  • 1 cheese mini roule - garlic and herb

  • Penne pasta

  • 2 cloves of garlic

  • Spring onions to serve






How to cook

  1. Add the whole pack of tomato's and garlic to a baking tray with a drizzle of olive oil

  2. Add the cheese to the centre of the pan and bake in the oven until the tomato's are roasted and the cheese has begun to melt

  3. Meanwhile cook the pasta until soft

  4. Remove the tray from the oven and stir the tomato's into the cheese. Add the pasta and serve with some sliced spring onions.


2. Corned beef and potato hash


What you'll need:


This one tray recipe is really easy to cook and can easily be tailed to different ingredients.

  • 1 tin of corned beef

  • 1/2 bag of Maris Piper potatoes

  • Broccoli stalks

  • 1 white onion









How to cook

  1. Peel the potato's and chop into small cubes

  2. Cut the stalks from a broccoli and cut into thick chunks (this is a great way to cut down on food waste and sneak some extra veggies into the food!)

  3. Add some vegetable oil and bake in the oven until the potato's begin to turn brown

  4. Open the corned beef and chop into rough cubes, add to the pan and put back into the oven until the potato's are crispy.

  5. Serve with HP brown sauce (amazing!) and spring onions. You could also serve with beans if you'd like.


3. Roast chicken dinner


What you'll need:


You can not go wrong with a mid week roast dinner and the good news is, you can do it all on a budget!

  • 1 Whole chicken

  • Carrots

  • Brocolli

  • 1/2 pack of potato's

  • Stuffing

  • 1 onion

  • Gravy granuals









How to cook

  1. Prepare a roasting tray with some chopped onion and carrots and place the chicken on top. Season well.

  2. Roast the chicken in the oven until cooked (see pack for instructions).

  3. Whilst chicken is cooking, peel and roast the potato's for your roast potato's.

  4. Steam the vegetables

  5. Make the stuffing as per instructions

  6. Serve with a heap load of gravy!



4. Sausage campfire stew


What you'll need:


The easiest slow cooker recipe!

  • 1 Onion

  • 1 tin of chopped tomato

  • 1 tin of baked beans

  • 1 tin of butter beans

  • 1 pack of sausages

  • 2 cloves of garlic crushed

  • Mashed potato to serve










How to cook

  1. Lightly fry the sausages in a frying pan until browned

  2. Add the beans, chopped tomato's and butter beans to the slow cooker. Season to taste.

  3. Add the chopped onions and sausages and cook on a low heat for at least 4 hours.

  4. Once the meat is cooked throughout and the sauce has started to thicken, serve with the mashed potato.

5. Beef koftas with flatbreads


What you'll need:


A tasty meal for all the family to enjoy

  • 250g lean beef mince

  • 250g natural yogurt

  • Lettuce

  • Onion

  • 250g self raising flour

  • Mint sauce

  • Breadcrumbs

  • Spring onion to serve









How to cook

  1. Combine the mince meat with the breadcrumbs and mix together.

  2. Divide the meat into equal sections and roll into sausage like shapes.

  3. Use metal skewers to hold the meat in shape and cook in the oven until cooked throughout

  4. Meanwhile, mix together 250g natural yogurt with 250g self raising flour. Add a splash of olive oil and season. Bring together to form a dough. Divide into 6 and roll out into circular shapes.

  5. Heat a large pan over a high heat and once the pan is hot, add the dough. Cook on each side for a couple of minutes, until the flatbread is browned on both sides.

  6. Mix together the remaining yogurt with mint sauce to make a mint yogurt dressing.

  7. Serve with salad.
